Fumihiro Kanegae, Ippudo’s roving ramen master Kanegae says that his goal was “to create a multi-layered ramen that transforms in the bowl from the first bite to the last” .
Every part of the dish, from the shallow black pottery bowls that evoke a Japanese garden to the making of the 30-day soybean-and-seaweed dashi, is thought through with extreme care.
We suggest the Shiromaru Hakata Classic Ramen, the original “Tonkotsu” pork broth, with pork loin chashu, menma, sesame kikurage mushrooms, scallions, and pickled red ginger  and don’t forget to try their Pork Buns, the best pork buns ever!
